Beef Stroganoff

This dish was named after the Stroganoffs, a Russian family of successful merchants, statesmen, landowners. They are especially well-known for their significant role in the conquest of Siberia. As for Beef Stroganoff, the dish has various origin stories all linked to different members of the Stroganoff family. One of the stories is that Pavel Alexandrovich Stroganoff’s chef wanted to make steak, but the meat froze in the Siberian winter. He could not slice it, so he made stripes from it. The first written recipe is from 1861, and it mentioned butter, mustard and sour cream as ingredients. Over the years, there have been variations of the dish with different ingredients such as onions, mushrooms, and even tomato sauce.
